Besides improving their ATK, which is kinda pointless unless you want fun, and boosting its stability value, does upgrading shield wield any other positive effects? Like, any small damage dished by better weapons, does it protect more?

Higher Stability means it getting hit takes a smaller amount of your stamina. With a shield like Artorias fully upgraded any opponent is going to run out of stamina trying to break your guard long before you get to half your stamina.
It's a very noticeable difference with medium shields too.

Higher stability is great as it lets you block more, which is good.
Also, upgrading it on elemental/magic paths increases it's resistance to that element, however the stability goes back to base level.
They're all good options, but usually the normal upgrade for stability is the best one.

As it increases the stability it reduces the stamina cost to block. And will allow you to block harder hits before breaking your guard. So there is an advantage to upgrading shields. Other than that there really is no effect, if it blocks 95% damage as a base shield it still blocks 95% fully upgraded.

Continuing on the topic of shields... I've noticed that bigger shields only bash instead of trying to parry, and some monsters bash with their shields, taking lots of stamina if blocked. Are the effects the same for players and their bashes?

Well, to be honest the bash is fairly useless when you have the "kick" ability. The shield bash is really just trying to balance high stability with not being able to parry as a trade off.

You get the same stability from a 30 str tower shield +14 as a 50 str Havels shield. But less weight, points into strength, you get it sooner and if crystallized can offer more protection than Havels. I would venture to say upgrading shields (as upgrading anything in this game goes) is definitely worth it for you.
Most focus on weapons and armor first however, which I feel is a logical path to take.

I upgraded the eagle shield for BOC. Helps a lot with 82 stability. (For non strength class)

But you block during a shield bash for most of the animation.
