it represents how much stamina you lose when you take a hit on your shield

From what I know it reduces the amount stamina lost when your shield is hit.
The more stamina and shield reduction you have, the more you can consecutively block before having a "guardbreak"

Equip the eagle shield next time you're fighting a capra demon to really get the effect of stability. You're pretty much invulnerable.

It might as well. At least when it's upgraded. You can just sit there throwing insults at him as his giant demon machete bounces off your shield. Surprised they didn't add a "boing!" sound effect to it.

Certain levels of stability also affect how your character reacts to blocking hits. The aforementioned Capra Demon with Eagle Shield will reflect the hit off due to the Eagle Shield's hight stability, but if you were to block the Capra Demon with, say, a Dark Hand that only has 30 stability, the attack would not be reflected and your character would be pushed back in a sort of stunned motion. If you blocked the same attack with a Crest Shield, then the attack would go through, but you would not be pushed back.

It has over 80 stability when upgraded. Plus, it's weight is 6, and the stat requirements are low.
