To parry the first hit, I go either by proximity, or by pattern recognition. The very first hit of an encounter is usually the easiest to parry by proximity since your opponent won't be expecting it, and most people attack as soon as they're in range to do so--so you jut parry as soon as you're in range! It works fairly well after that too as long as your opponent doesn't catch on and delay his attacks. Easy way to test this is to let your opponent get close to you a few times then roll back--if he attacks every time, then you're set for parrying.
As for pattern recognition, look for rolling-R1s and running/backstepping-R1s especially, or any attack pattern your opponent likes to repeat. Some people love to keep using those and don't even think to throw empty rolls or backsteps in there occasionally. Those who do are the dangerous ones, since they'll bait you and backstab punish your missed parry.
