Smough is that "special" member of the family no one likes but was allowed to hang around the Four Knights so he wouldn't feel left out and start hitting people with his hammer lol.

Well from what I understood, Gough was one of Gwyns knights, whereas Smough was simply their executioner.

Thats correct. But the only reason Smough didnt manage to attain knighthood was because of his eating habbits. At least thats what i think the reason was.

Well yeah, it's kind of hard to claim you're the good guys when you count a cannibalistic abomination that loves killing as a noble and renowned knight

Can't be a knight because of his appetite.
Gough unfortunately is one of the more obscure ones... Along with Ciaran.
Though at least there's some speculation about Ciaran, with the whole "her and artorias" thing.
To my knowledge there's little to no info on him to go by.
