Why did they have to patch the bridge wyven? Now I don't have a hope of killing him with my mage.
I can't avoid his instant kill flame breath, and since he heals now and won't come down until he is healed up I can't use spells to kill him either. Hell Gywn is easier then this thing!

You can avoid him, once you get to the other side of the bridge, she/he will fly away and will not comeback unless you stay in the middle of the bridge for awhile again. So once you get the other side, you can go loot the Claymore safely (after the wyvern flies away).
Here how I did it last time:
1) Hid behind the walls. So the fire breath can't hit you.
2) Lured him to come down. You can do this by forcing him to attack you once with his fire breath and then wait behind the wall. Eventually he will come down because he can't hit you with his fire breath from there.
3) Once he is close enough that 2 steps more and he will try to attack again, I run past him towards the bonfire.
4) Once you get to the room, don't stand there! He is going to do an fire breath attack inside that room, so you must walk to the right where the Sunlight altar is and stay there until the wyvern flies away.
5) Profit!

Run fast with a good fire shield and dive down the stairs. Heal up. Run across to the left side from the stairs. Stand in the safe area across from the stairway(on the left side facing the dragon). Wait for him to land. Run right between his legs and into the bonfire area. Move to the right quickly to avoid any fire breath. Wait for him to fly away.

I keep trying that but the he keeps leaping straight up and blasts the entire bridge in one go from above, hitting all the safe spots as well.

Looking at my shield collection my best bet is the Dragon Crest shield. An invader gifted me a Black Knight shield, but I'm too weak to use it. So its going to be 85% of instant death. How much health drain is that?

I have tried pretty much all the fire resist I can get, Black gold trim robes, fopsweat, and fire resist shields. Still one hit

I think there is an 'OHK zone' in the middle, but on the outside you can take the hit, like on the stairs. But in the middle of the bridge it was OHK.

Don't worry actually guys, I decided that since I finished the game already without killing him and there is no good pvp or other replay to the game I'm just going to leave the boss and go do something else.

Pfft....killing him with a mage is so easy....
Go down under the bridge near the entrance to where the three rats are. Aim at his head with your bow. Don't move. Switch to your catalyst. blast him with a Crystal Soul Spear. He'll fly away for a moment and then land again. He won't heal right away. Plenty of time to blast him again. With the dragon ring and the crown of dusk, it'll only take 3 (or 4 at the most) shots to kill him.
....try killing him in NG+++ with a melee toon and get back to me.

As I posted on an earlier thread I think the Hellkite is the unfairest boss in the game because it can heal itself and it seems to be almost unkillable if you try and melee it because it's firebreath attack means you are instant toast.
The only way I did it was long range with the Dragonslayer Great Bow that you can pick up in Anor Londo and the special arrows which you can buy from the Giant Blacksmith there. These cost a lot of souls but this combo is effective in other areas of the game, so, in my opinion, well worth it.
I stood at the Taurus Demon end of the bridge as far across as I dared and brought him down onto the bridge with an arrow. As he advanced I shot him again to keep him interested, then turned back and ran down the stairs to where you initially meet Solaire. After he's finished his attack run back up quickly and shoot him while his back is turned to stop him flying back to his perch and healing. Rinse and repeat, he will die eventually. I know this sounds like a long winded method (bit like this post) but it was the only way I could do it.

Go underneath by the rats and get your bow out. Manually aim for the dragon from there, switch to your catalyst and just cheese him. For added bonus equip the dusk crown, bellowing ring, and red tearstone ring w/ 10% health for major damage even w/ low level spells.

Stand behind a wall so his flames cant his you and back up a little bit. Then get a bow and shoot arrows into his head/back until he fly's down onto the bridge. run through his legs into the undead parish

Do you mean like a man while staying on the bridge the whole time or by playing peekabo using the stairs? You go under the bridge, manually target w/ the bow, then switch to the catalyst and free aim your spells (should already be aimed since you aimed w/ the bow). If you cast as soon as he lands on the castle he won't heal. Check this out, about a minute in.
