So, heres another idea.
Give and take with Buffalo Bill You've got a list of specific weapons/equipment attatched to each boss:

Anyway, the idea is to start off in NG at level one, 8 points across the board, SL50(so that leveling is harder, this might need revising too). Your starting equipment is plank shield and regular dagger. No armor, no spells, no catalyst.
Rules:
1) Bosses can only be challenged ONCE. No reviving them to requip.
2) All bosses must be dead by the time you kill Gwyn.
3) After killing a boss, you may choose any number of items from its armory to use, however for each item you choose to take, you must increase the difficulty by +1.
4) Choosing a weapon lets you reset STR high enough to 2-hand it and enough DEX to give full AR while twohanding. You can increase the difficulty by +1 to raise INT/FTH to deal full magic damage and to 1-hand weapons.
In the case of spells you can set your etheral stat high enough to cast a spell as soon as you 'buy' it.
5) Once you've re-quipped and set stats/difficulty, you have to play up to the next boss before you can change again.
6) While you can level up, you may only put points in VIT, END and RES.
Rules may need abit of tweaking but you get the idea.
