I started upgrading a longsword a while ago just because I could, it's at +6 now. But since then I'v found a couple of other interesting swords I'd like to use. Should I stick with the ls for now or start over

Go with whatever you like man. All upgrading materials are replaceable, except maybe the slabs, which are pretty hard to find. A good rule of thumb is to not upgrade something using a slab until you're sure you want to stick with it, but until then you don't really need to have any reservations about switching it up

Keep upgrading it if you like, or start upgrading another weapon if you aren't satisfied with the Longsword.
You can buy titanite shards from the Undead Parish blacksmith for 800 souls a pop, it's hardly a reason to start over.

Something like a Longsword is good to just convert to an elemental weapon for certain situations. You'll have so many upgraded weapons when you finish the game, you won't be able to keep track of them all. Just experiment with lots that you like!

I would take it down an elemental path since.your. close to being able to do that. I made a.fire ling sword when I started the game and used it for a.long time. BTW welcome to the forums!
