It took me awhile to get him down on SL 1, but I can tell you two methods.
1. If you're actually looking to fight Artorias, I recommend fast roll and the Hand Axe, NOT THE REINFORCED CLUB OR ANY OTHER VARIANT OF HAMMER.
2. If you want to just get it over with, get Red Tear Stone activated with Bellowing + Dusk Crown. He normally goes down in 5-8 Great Combustions. Have NORMAL COMBUSTION with you if you run out of Great Combustions. Just remember not to get hit.

It is possible to one shot him using chaos fire storm if you are in full hypermode with all of the boosting equipment, it makes artorias really easy.
Of course you can use other pyromancies but they are not all that necessary.

DIbs, why the hand axe over a reinforced club? I've found you only get to hit him once during the openings, so more damage on that one hit rather than a faster swing seems better. Unless you can get 2 hand axe swings safely on him, then the axe would obviously be better.
Plus the Reinforced club will easily stagger him out of his power up animation.
The easy way to fight artorias at SL1 is to use the BDCR and Crown with combustion and great combustion attuned. You can put on the seance ring and PW yourself, then switch to another ring. (I like the DWGR for this fight as you will be rolling out of the way a lot)
The Harder way, but still easy if you're patient. Is to dodge his attacks and hit him once after the lunge, or the jumping stab. Those two attacks are the safest to punish, everything else even if you dodge it perfectly it's a risk to swing at him because he has such little recovery on many of his attacks.

You can get the Hand Axe to get two swings in, it's literally like a Curved Sword except for the R2.
It also has amazingly fast recoveries, so if by chance Arty decides to tweak his moveset like he so often does, you can roll out of it.

It has been some time since I did this run, so I don't remember exactly how to work it, but:
1) Artorias can be unpredictable sometimes, so your Hand Axe is the best choice since recovery.
2) You should always try to bait Artorias' high jump and triple somersault, those are the only moves that are relatively safe to punish. You shouldn't risk too much any other move as it is possible he will perform the light poke and put you near death or kill you if you use the RTSR or worse, if you attack from behind.

Yes, my general preference as SL 1 is to fast roll w/ hand axe. Dodge everything, go in for 1 maybe 2 slashes with the quick lil' axe.
You could always try spacing with firebombs/light crossbow
