What's a good strong weapon, that can dish out a bit of damage, is relatively quick and I won't get punished too hard for a miss?

DGM(or any ugs), small hammers, curved gs'. or anything with a wide arc attack.

For me the Claymore, the MSGS and the Great Lord Greatsword are the best strength based weapons because of their movesets.

The claymore is not a str weapon. Just like the zweihander is not a str weapon. They're quality weapons, notice the C-C scaling? Thats there to tell you they benefit just as much from dex as str.
Unlocked DGM fighting defeats most bs attempts and hits hard, but you're still slow. An elemental murakumo or the gls are weaker, but they're faster and stunlock as well.

Black Knight Halbered and Black Knight Greataxe will give you that breathing room you want, but you will have to be careful with your swings as people like to parry spam most BK weapons.

I really like the Black Knight's halberd moveset and how it looks, so I'm going to suggest that one, it is also relatively quick to get if you have the Master Key (though that black Knight likes to troll me and only drops the halberd on my dex characters ¬ ¬).
Having said that, the Greataxe has better STR scalling and I know that some people absolutely adore it, so yeah.

Demon's Greataxe is known to be the number 1 highest hitter. If you want that, go ahead and use it. It also has a pretty long range.

If by tank you mean a character with high poise and health, then I suggest a halberd. Slap on the leo ring with it and you can spam R1 to trade hits with anything and still win. That is of course if you have high enough poise to make it work.

i'd say get a light str weapon for your left hand that can parry and cancel backstab attempts like the JAGGED GHOST BLADE!!! i'm dead serious btw, it's the main pillar of my str build, only way to make large club and demon machete viable for me.

Gold Tracer. Wear lots of poise and bleed people out, mix up the light and heavies to not get parried

Can confirm gold tracer. I just started exploring bleed builds and that thing is a monster. It's not thematically very tank-y, and it doesn't stun well, but 1v1 it's an easy victory.
