Practice makes perfect! I died a thousand times against mages, and learned one crucial rule: stay close to them and don't let them even get a chance to cast. When they cast, you attack.
In that first video, I just let that guy use up all of his spells until he didn't have anything. He switched to the Moonlight sword, but I finished him before he had the chance to do anything.
