Well, whenever either one of you rolls and are close to one another, try parrying. Better yet, you could use a spear as well(preferably the Demon's spear since it's been said that it's longer than the Dragonslayer Spear, although I can't really tell). You could try turtling as well, if all else fails.
Also, this may be a very specific situation, but while I was trying to clear Sen's Fortress, someone cosplaying as the Iron Golem invaded me, and when he used his Golem Axe WIND SCAR, I rolled in and tried to roll attack him with my spear, but he parried right after I rolled past the Golem Axe R2 and he ended up stomping me with his Hornet Ring riposte.
Although of course, I did let my guard down because of the fact that I was just trying to rush through Sen's Fortress and because (Although I won't deny that I'm probably just not that good at PvP) I wasn't in my PvP setup. And I learn from my mistakes.
The same guy invaded me again and was still cosplaying as Iron Golem in Anor Londo, and I won.
