More to do with what stats you want for your toon than anything else. Also what moveset you like. Uchi or washing pole for me.

Depends on perference I believe. All 3 pratcially have the same stats, only difference is Washing Pole has length, Iaito has the dash attack, and Uchigatana is.. an Uchigatana...

I was pondering on the same issue 200hrs of dark souls ago.
Basically, damage-wise, uchi > iaito > washing pole, but only very slightly. If you have good stength washing pole might do better.
Moveset-wise, uchi and washing pole have the same movesets, but combos from the washing pole are slower. Range is also longer for washing pole, especially with the one-handed r2 and dashing attack. Iaito differs only from the r2 attacks. Instead of a forward poke, you get a horizontal slash, which is slightly shorter in range, but has a very wide sweep. Lots of people love the Iaito for that attack, including me.
Weight for washing pole is ridiculous though, and it doesnt benefit much from dex.

I'd use Uchi, i prefer the 1H R2 stab to be honest..
it's highest damage too at +15.

Yeah - the washing pole has good reach but is the slowest of the katanas but is good to use when your opponent has a long-reach weapon (or if you are fighting a 2v1 - the large reach and arc can allow you to hit two opponents at once!!). For shorter range katana - I prefer the Iato because of its speed. I have gone blow for blow with a host who was using a Q Furysword (which is also a fast weapon) and I was able to beat him to the punches. The secondary bleed affect from the quick Iato slashes also helped out.
For Reach/Distance - Washing Pole
Quickness/Speed Attacks - Iato
For leveraging knowledge of Washing Pole moveset - Uchi
I keep the Iato in my backpack to ensure I can evenly match-up with an opponent's quicker attacks.

Washing pole weighs a whoping 8 lbs, 3 more than other katanas, 2 more than a claymore, as much as a great lord sword does. Its heavy, and loses the speed and hence the point of a katana.

washing pole is hands down the best, the extra range makes it far more powerful then any "slight" damage increase a uchi might have
and due to the long range of the washing pole, the R2 attacks are actually very very useful, especially the 1 handed R2.

at 20 strength 40 dex damage is as follows for +15
One handed:
Washing Pole: 380
Uchi: 420
Iaito: 410
Two Handed:
Washing Pole: 403
Uchi: 420
Iaito : 410
at 25 strength 40 Dex the Washing Pole will match Uchi in damage if two handed, and at 26 strength it passes it.
give me the Range of Washing Pole all day every day.
to the people saying the washing pole swings alot slower then Uchi.. i tested the uchi vs Washing pole and i was unable to tell any difference at all. never tried the Iaito though. but uchi and washing pole are virtually the same.
and due to the long range of the washing pole, the R2 attacks are actually very very useful, especially the 1 handed R2.

The longer swinging times of the washing pole plus the weight just ain't for me. The Iaito r2 combined with left pyro glove has done wonders for me. Favourite combo: great fireball -> r2 or great combustion -> r2.
