Speaking about something related to this, I am glad that Dark Souls adapts the armor to gender and is not like demon souls, I mean demon souls would be more realistic in that sense but to me was an unneeded hassle.

He is not a girl, the corpse you pick up his armor from it's a male.
Also my game it's in Spanish, and in the spanish descriptions they specifically mention him as a male.

See that the word "asesino" (assassin) it's male. It would be "asesina" for a female assassin.

its funny when she invades you she takes like full damage from you but when you summon her she turns like 10X stronger than you and takes like 5X less damage

Exactly, I don't know if she stole it, but she certainly it's not Pharis. Besides the descriptions mention him as a guy, it also says that his hat is popular among young people so it would make sense if other people besides him use it.
It's not the same as Kirk because when you get invaded by him, it SAYS in a message that it's him. When you find Pharis you can only speculate that is him, that's why I think it's just a girl that stole/got his hat.
