Isn't it sweet.....
....when you pull off a parry and riposte. I don't manage it very often but when I do it feels great.

It really feels special when I do it because I'm not really aiming to land a parry. When I parry, I normally go for a partial parry to negate some damage that I'd take if I couldn't dodge the attack for some reason. It also looks awesome since I dual wield katanas - it almost feels natural.

As for backstabbing, try not locking-on. Just run straight at your enemy, right around them, then flick your left stick at their back and hit R1--instant, easy backstab. I find it a lot quicker and easier than trying to go around and around the mob while being locked-on--especially if you're turtling. If you have your shield raised, and hit R1 too quickly after lowering it, the game won't register it as a backstab and you'll do a normal attack instead. If that's your problem, try lowering your shield a little sooner before trying to backstab.

Their windup animations are so long, and their actual strike are so fast, that you really need to be familiar with their moveset to parry them (except the spear and axe hollows, they have ridiculously generous parry windows). If you can parry the hollows, you shouldn't have any problem parrying everything else in the game.

I actually practice parries in the forest ( PvE), the mage is easy enough, but the brigand really puts the pressure on you to get it right with the damage they do, but the cleric, the cleric has such a slow wind up I always end up jumping the gun on that one, and finally the rogue just spams fast knife swings which are ghey.

^The Mage has an easy enough weapon to parry (shortsword, if I remember correctly), but it's getting him to pull it out that's annoying! The brigand's axe also has a very generous parry window. It hurts when he hits, but keep cool and you shouldn't miss much. The hardest part about the thief is he (she?)'s pretty hard to see, so it's tricky to gauge when to parry. But knifes are easy to parry because they get spammed. The cleric, I agree, is the one that's really tricky to parry. He has two attacks with very similar looking windups, but one is faster than the other, so he gets you by surprise. I think Petrus is similar.

I don't know if this helps anyone else, but this one YouTube video I watched helped me land a lot more parries against enemies I never thought I would:
Watch for their forward swing, always parry when they do that and you'll land a good amount of them. What helped me improve upon that is noticing the animation of the attacks and getting used to my shield's parry animation, then timing it so I "push" the enemy's weapon away. Works 80% of the time for me.

I find the best kind of parry is when you don't even get timing for the blow. You just parry the very first attack. I just smile, and it also really sets the tone for the battle.

Not to mention if you have a Str weapon and the HR on. It's so friggin satisfying to just go psychotic on the enemy with that animation.

Yeah they have some very annoying attacks, but i find it pretty easy to parry them nowadays. But the easiest thing to parry IMO is a spear wielding silver knight! That sweep attack is almost unmissable.
