Whenever I use my Pyromancies and Sorceries, I find that I get a lot of dodges and I wondered if manually aiming my spells would help. Any tips with manual aiming?

I can give you the basics. But, I suck hard at it. Horizontal aim = L3, vertical = R3. Imagine your head as the cross hairs. Aim your head where you want to go. Then use R3 to gauge the height.

What helped me the most, specifically with pyro, was playing locked off all the time and getting used to finding your target without using the locking mechanism. Playing unlocked is really useful even for melee because you can always adjust the direction you're attacking, so you attack where they'll be and not where they are when you start the animation.

man.. if i can make a suggestion..
take the advice you're getting here but.. just make an attune/dex/vit character and play thru the game using pyromancies unlocked.
have a rapier and heater shield too, but primarily stick to pyros.
its like if i compare this to playing a guitar- classical hand position would be locked on. locked off would be your own position that you developed. if i tell you how to do it my way that doesn't necessarily mean it's gonna work for you man, u just have to learn it yourself and take whatever advice works...
i say play thru pve because unlike pvp, you'll have relatively low stress environments and different scenarios to try out- where in pvp things can be predictable and ull make a lot of punishable mistakes.

I've been on it for about two months, and I can't play any other way now. PvEing is a pretty solid suggestion too. You can just sit in an area and practice lobbing fireballs at mobs until your aim is on time. It helps a lot as well.

All great tips and the pve idea is a good one Rifter...when I used to host in the moonpit I would practice throwing daggers at stuff to work on it!
Fighting lock/unlocked is something I have always done....every roll attack you do should start locked and finish unlocked to manually aim the attack were the person is for instance!
Casting spells is no different you wanna stay locked till you wanna use a pyro then quickly unlock and throw ahead of were they are going!
One trick I find useful is using a gcfb and doing that but then if you miss roll through it and try to pull them through the chaos AOE before it dissappears!

^This....and using a bow unlocked will help greatly too, since fireballs will follow the same path as arrows for a bit. In fact, I learned to throw unlocked by using EVERY PROJECTILE this way.
