Easiest way to do it, throw throwing knives at her, they'll stick into her and make her visible and after like 5 or 6 she'll stagger and become visible, allowing you to chop off her tail with ease.

Honestly, what I did was just used a Unupgraded Pyro Glove with a normal Fireball (Or possibly Fire Orb, don't remember) which did close to no damage at all, then ran to her backside with my +10 Cleaver.

the Scythe, G Halbred and BK Halbred are really great tail chopping weapons. Go get one and cut away
