Yes, I do it all the time. I find that it works best when you know the following things: 1) how to parry and which spells can be fired fast enough to take advantage of it, 2) how to organize your spell list so you can quickly get to the right spell in a moment's notice, 3) how many spells you need to destroy an enemy or roughly how many hit points each enemy has and 4) which order to go through the game in, in order to get the spells you need to progress past the area boss. A bonus would be figuring out spell combinations that are really helpful for areas - becoming invisible and then using hush or aural decoy to bypass annoying enemies is a pretty good option, when you know how to control your characters' pace.
My current main character only upgrades weapons because he has nothing better to do with boss souls lol.
