Aquisition of Souls quickly?
So my goal is to make a 120 build as fast as possible with minimal effort.....
What are the quickest ways to earn big quantities of Souls and as fast as possible?

pvp grants the greatest number of souls. At least this is what I've found. I've never made souls as fast as I do when I pvp or even coop sens/anor londo

Go host in the forest, a high level will invade you sooner or later. No ganking, though.

The problem with the whole "PvP" recurring suggestion is how unreliable it can be.
Profiting on PvPing relies on quite a few factors.
Are you any good?
Is the level you're at good for PvP?
Where will you be PvPing, and how will it affect the outcome?
If you're an invader in the forest or Anor Londo, people will gank you to a bloody pulp much of the time.
All that aside, I'd like to suggest doing some good ol' fashioned Jolly Co-op.
If you lay your sign down in a place where you meet the average level requirements, you're bound to be called into many worlds and collect a nice amount of boss souls. (Not the soul ITEMS from the bosses, but the amount of souls you receive after killing a boss. Just thought I'd make that clear.)
I recall when I started, I made quite a profit hanging out at the fog gate to Gaping Dragon and helping out my fellow players.

If you don't want to PVP you could always just grind it out Phalanx style, Silver Serpent + SOA + High Damage wide swing weapon = 10,000 a minute.
Spend roughly half a day doing that and you'll hit 120 no problem.
Plus, if you leave Priscilla alive, you can kill invaders for the extra boost. Just no TWOP plz. =D

PvE up to SL 60. Then either co-op in the lord areas/anor londo or get someone to RSS suicide level with you. That or the forest.

If you're looking to farm souls quickly without the hassle of PvP, there are three commonly used methods of rapid soul farming in PvE.
The first is only useful for very early levels and stops being useful around levels 15-20, but can be done very early in the game. After beating the Taurus Demon and running past the Red Bridge Drake, kick the ladder down and open the shortcut to the upper Undead Burg bonfire. From this bonfire, climb up the ladder and quickly run onto the bridge just long enough for the Bridge Drake to notice you, then run back under the bridge. The Bridge Drake will kill all or most of the enemies on the bridge you will get their souls. I can't remember exactly but I think this provides ~500 souls every 30 seconds.
The second method is farming the NPCs in the forest past the sealed door you open with the Crest of Artorias. Make sure you are hollow while doing this, or else you will get invaded often by forest hunters. This one is difficult to describe, but I'll do my best (and in case I fail in explaining, here's a video to demonstrate). You run out into the forest and aggro all of the NPCs, then run back to the stairs by the door and stand on the small ledge to the right of the stairs. The NPCs will run up the stairs in an attempt to get you, but fall over you and off the cliff to their deaths. Sometimes the NPCs don't follow the whole way or take longer to chase you off the ledge (like the priest in the video), but optimally each run grants you about 6000 souls every 60 seconds.
Lastly is the most effective PvE method found to date. You must have run through the Painted World far enough to open the big door shortcut near the maiden statue that leads back to the beginning of the level and have an AoE spell such as Wrath of the Gods or Fire Storm/Fire Tempest/Chaos Storm. Run from the bonfire through the opened shortcut door towards the maiden statue. Once you trigger all of the Phalanx enemies around the statue (the blob-like undead with the spears and shields) use your AoE spell to kill all or almost all of the Phalanxes at once, then run back to the bonfire. This method grants about 8500 souls every 30 seconds.
Keep in mind that all the souls amounts I gave are the amounts given without any soul boosting effects like the Silver Serpent Ring or the Symbol of Avarice. Using both of those will allow each farming run to grant even more souls that I stated.

host or invade in the forest, if your low sl activate the rtsr and use hr to ohko them.

I always found the quickest, least troublesome, and most reliable way, was just to speedrun through the game. Get through NG and part of NG+ as quicky as you can and the bosses will give you all the souls you need to reach SL120 in well under 10 hours.
Longest part is getting all your gear and spells. Leveling, when you can run through the game quickly, is no problem.

I know a secret way to get souls that my ******* friend is doing every night. He gets around three million every time too. I wont post it here so pm me if you wanna know though i strongly strongly frown upon it.... Youll all hate me if i post it here so i wont. He really is breaking the levelling systems back and pissing in its eyes...

The methods I use, and a couple of them have been mentioned:
-the drake on the bridge, trigger its fire breath, reap 555 souls, rinse, repeat
-save up 20000 souls, which, using the drake trick doesn't take long, buy the crest of artorias and farm forest hunters, but make sure to stay hollow or you'll get ganked by people massively higher level than you.
-painted world of ariamis, you can use the wrath of god method, I liked to use the poison mist method, run in, get off two mists to make sure i got em all then run out...takes longer, but definitely effective if you don't have WotG yet.
-dark anor londo, there are two dark moons in the corridor before O&S, pull them one at a time, use greater magic weapon or crystal magic weapon if you got it and just parry parry parry, that's 10k each, then just homebone to the princess bonfire, thats the only way to reset them, repeat.
-if you pvp, I like to use the Redsign soapstone, get human, go to the bonfire in burg (the one with the drake shortcut) and just lay down the sign on the wide area...the one right after where you first see the drake, that connects to the spear guys...just lay sign and wait, there is generally people always pvping there, and if you die, you dont lose human, and all you have to do is collect your bloodstain for your lost souls

Just do the Dragon-Head glitch........ who cares if its a glitch, because with it you can get to 120 in several minutes.

I have to admit - I hate levels and I hate stats. I prefer games with skill based approaches (very rare). So as soon as I hear a good strategy I start using it.

The thing is, this game IS skill based. Levels don't mean much at all; people have consistently beat it without leveling up. The thought of seeing those numbers rise is the way new people begin to feel safe and confident in their own skills.

Well it doesnt really matter if its the Dragon head or the bb
D-head = high lvl vs weak gear
BB = low lvl vs strong gear.
its all the same to me but I would prefer people use the D-head one because at least they would have to start all over with $h!TTy gear and farm offline for a long time to get all their slabs and stuff.

It really depends on which class you play as and your playstyle. Since I favor heavy magic use using classes, my characters need a lot of souls to build spell and miracle repertoires, meaning that I can't apply my skill without the appropriate spell whereas I can fly through the starting areas pretty quickly because I know how to parry, riposte, kick and use the necessary strategies to overwhelm the early enemies.
