So I was looking at that 'missing' statue where you fight Ornstein and Smough. And I shot it to determine its' height. (Since you can still shoot it even though it isn't there.)
It is small, about two bricks shorter than the ledges on the side. It is also on two pedestals rather than one like Gwyn or Gwynevere. I'm thinking it was originally a statue of Gwyndolin, but the developers ditched the skin because they decided to leave his statue out. Probably because Gwyndolin never really shows up much in the game, and he wears the mask for being a shemale or deformed or whatever. So yeah, probably just a whim of the developers.
OR, it could have been a statue of the God of War, the first born of Gwyn. But they had it taken out since he did lose deity status and all of that.

On another note, their are some Golden Doors in the room with Gwynevere. On those doors is a little sun symbol with a face on it, a lot like the one Solaire wears. In game, it says that emblem was the symbol of the God of War. So the emblem on those doors is probably the original look of the emblem. Just food for thought.
