My coop character is at LVL80. It seems to be a pretty good level to help people take on the Four Kings, Seath, Nito, and Bed of Chaos.
LVL120 is more of a PVP cap. You might still get summoned to help but not as much as being at a lower level.

120 Soul Level is the unofficial PVP target level. For co-op I would use the following chart.

That chart doesn't really cover NG+ though. There's still plenty of co op to be had in NG+ right?
