For the true "casting" experience, you may like a pure pyro build.
Get DEX to 45, VIT and END to 40, ATT to whatever amount of attunement slots you want, and ignore all other attributes. Then, upgrade STR enough to wield a high-scaling DEX weapon you like, and then slap a charcoal pine resin on it when you go into battle.
