Does anyone have a good idea for armour that allows me to fast roll AND give good elemental defence? (Fire/magic/lightning)

Most of the lighter sets have good elemental damage...
Tattered cloth manchettes+10, Blood-stained skirt+10, and either the Sage robe+5, Dingy Robe+10 works well.

Dingy Set. best light armor set in the game imo. i like to mix match if im going all light for different types of defense.

That's pretty well balanced to cover all the elements. Unless you're more specific, I think that's a pretty good starting point!
