Welcome fellow Noob, May your days be forever filled with Jolly Cooperation and Plentiful Souls.

As far as help goes, what were you trying to do with this build? High Faith? High Strength? High Dex? What do your stats look like?

If you're having a lot of trouble with the Gargoyles, I reccomend that you go human (and pray you don't get invaded) and try and pick up a coop partner along with Solaire, the fight will be a cakewalk after that. If you can't avoid invasion like you said, then I think playing in Offline mode will still allow you to summon Solaire, who will make the fight a million times easier.

That set up is going to require A TON of grinding to use effectively, but it does seem like it would be effective, I see you're going for a class that's good at PVP (just try not to WOG spam too much ok).

    Good Luck.

something like this for your build? (no real need for the sun ring as you only have one attack spell)

Leveling Vit to 20 and using the FaP Ring always manages to give me enough health to get through the game, even on my first plsytrough.

And I would recommend upgrading you weapons first, and using the rest of you souls to upgrade your Dex and Str to whatever they need to be to use what weapon you want to use in the long run. Then after that level up your endurance, focusing on Vit last.
At least thats what I do for every build, it works, for me atleast
Oh, and I'm on PSN. Only have two characters made though, so I most likely can't help.

great lightning spear requires 30 so no, no more grinding except for 10 sunlight medals which shouldn't take long... as for armor maybe the chain set or... the cleric set is actually decent when upgraded so maybe stick with the pants and robe but find some heavy duty gauntlets somewhere (the balder knights drop their armor occasionally....)

Well most of the Starter armor is good upgraded.
But if you want something nice you can get one of the sets in Darkroot. Stone Armor is pretty strong and very easy to get. Only need 20k souls to get into Darkroot Garden, and you get the access to the eastern set and the stone set for that, plus, booth the Elite Knight armor and Knight armor are in Darkroot, one near the Stone giants, but you can get it by just running past, and the other right next to the hydra. You could suicide for that one if you really wanted

Armor isn't too important in the depths, but what he said is good ^ I say, a good shield and patience. I just went through there on NG+ with my no-shield character. Piece. Of. Piss.
Under this text, there's some tips on how to get through the depths. It may contain some stuff you don't want to read if you want to just play the game and learn as you go. happy
    Spoiler:
Anyway, fire hollow suck, but just block, wait for them to bounce off your shield, and kill'em. Club may not 1-shot them, so you might have some problems. Butcher CAN be back stabbed, so go for that a lot. Block any attack other than a two handed. That's when you circle around.
Giant rat... Dodge if you can. Super fast and hard hitting, but squishy. I'd recommend trying to read his attacks as much as possible and attack between them as much as you can. One of the fights you don't want to extend. The slide after the big rat, slide down the very left. It'll be much faster and you won't have to attack the curse frogs (basilisks).
Solaire doesn't really help with the gaping dragon, but I'd summon him anyway. Or two other players. The bonfire in the depths should be full of summon signs. Don't attack the gaping dragon yourself unless he's just done a big charge and is then sitting still to rest. Other than that, use your flasks to heal your teamates.

And boom. You just beat the depths, and you're off to blighttown.

    Heh.
I hate those guys, so no, no advice from me other than managing to get a weapon to the point where you can atleast two shot them, and then block and attack as you normally would.
Oh, and when they hold there dagger up, don't attack them

There is a bonfire there that's not safe from invaders. Only turn human if you gonna summon help. Their signs are in the bonfire room. There is also a NPC invasion there so don't be alarmed.

Also, try not to kill one of the helpful NPC.

Those kind of invaders die down a bit in the depths, but they are still there a bit, but still You should go Huma n there. A good place to get help, due to how maze like it is your first time through. That and a NPC invades you, and he's fairly easy to take down.

Oh, and the depths is a good place to farm humanity, since it has so many rats. So you're at the point now that if you ever need anymore really bad you can just grind for it.

Oh, and don't forget to grab the large ember down there, its behind the first Butcher in a chest.

I would say it depends on the surrounding, spider shield is surely better agains poison and toxic things, but I think knightshield had a better stability for pure melee problems
