Ups, didn't see it was in your signature.
The build is ok, it's def lacking spells considering you have 40 DEX = faster Pyro casts.
Other that that the build is solid.
A slight alteration to your gear setup, I'm probably going to get flamed for telling you to get MoM but if you are dying in PvP perhaps a bigger HP pool will help.
You don't need that much Poise.
Other that that all i can say is practice,practice,practice

Okay seriously the best way is to find someone on here to duel with and practice. It's what I did with Wyrm and RagingDragon, they both gave me good duels and pointers after every loss. Then I finally started to get the hang of it and got some good victories on Raging. From there it just took more practice and now I'm at like a 60 to 70 win percentage with the non min/maxed build in my Sig.
Last pointer is to move a LOT. While learning make sure you can fast roll, or DWGR if you don't refuse to use it like me, and dodge and roll a lot. Try and be unpredictable and aggressive, if you just sit back and wait a good player will destroy you.

The most important thing to mention is you're using one of the most versatile builds in the entire game.
Use Havels Ring and a Dark Wood Grain Ring, and then you'll be able to use nearly any gear setup you can think of. Try out new weapons and see what works for you. The following list of items is a great place to start when building skills.
Fast Weapons.
Balder Side Sword
Dragonslayer Spear
Rapier
Great Scythe
Slow Weapons
Black Knight Weaponry (any type)
Demons Great Axe
Demons Great Machete
Stone Greatsword
Great Club
Giants Halberd
For shields, I'd recommend one of the following five.

Looks good, though I'm biased against the DWGR. Build doesn't matter all that much tho really. Practice will help you more. Also consider the Black Knight Shield, it has amazing stability upgraded and 95% fire defense which is great since pyro gets used a lot in PvP.

It really depends on how well you can personally use the equipment. That build should be fine, and if you need to make any revisions to it, I assure you the stats will be just fun for you to just switch equipment around and completely re-invent the build without stat distribution.

You'll lose a lot in the early going, just keep at it. Eventually, the wins will begin to tally up.

Join FC if you havent. Practice there for a few weeks and you'll see improvement. Then you can move onto the dishonourable combat of the real world with experience.

As it stands right now I'm SL91 I believe, got Str and Dex at 40, just leveling End and Vit now.
I did three duels in Forest PvP (surprisingly all were fair fights) and lost all three, which is why this thread was made.

Forest PvP is a poor indicator of your build's strength. There are no level limits in the forest so you could have been fighting SL300s.

Well, allow me to clarify:
1st duel I was invaded by a Hunter
2nd duel I invaded using a Cracked Red Eye Orb
3rd duel was me summoning a Dragon covenant member through remnants
So while only one was technically Forest Hunter PvP they were all located in the forest!
EDIT: As for ground rules for some practice duels, as long as you don't run up and spam WotG when I'm at low health we should be fine.

Study how your oppenents attack you, evade a lot.watch the moveset and very important, calculate their stamina,when they runs out you may easely attack.

is your warrior already at 120? If not I'd say take a point or 2 from vit and put it in att and put fire orb/ great fireball in. You'd be surprised how well a single spell can boost your fighting power, even if just a fireball. It gives you range and field control options.

I'm with Cloud here, not only does it give you some ranged ability and field control but your enemies won't know if you have more and will be extra cautious.
Shoot me a friend request, I don't have a 120 but if you have any characters around 30 I'd be happy to spar with you. Oh, and as a few people have said, the most important thing about how you play is how comfortable you are with your weapons. If you dueled the best player in the world but he was using a weapon unfamiliar to him, you could easily destroy him. Build doesn't matter too much, if you engage in much forest PvP you'll get used to fighting people with 99 vit and Moonlight Greatswords, but if you know what you're doing health doesn't matter much.
Oh, and 76 poise is the point where you can resist stagger from any 2HR1.

First, you need to get comfortable with the lag, and dodging adjusted to lag. Once you've gotten that you'll start finding the way you like to fight, whether it be using lots of spells, using long weapons or stunlock etc. You'll find your calling eventually, then you'll begin to turn a win.
For now, just experiment and try to get to grips with the online scene, it's very different to fighting NPCs or dealing with random invaders.
