^That's called a partial parry. Happens when you parried just too early or too late.
@OP:
I think the only difference in parrying with different weapons is the parry window and cooldown. A larger window (parrying dagger, buckler, target shield) will give you more room for error when parrying, because the parry is longer. A shorter cooldown, on the other hand, will allow you to parry consecutively faster, if you missed.
I'm not sure on all the cooldowns though. I think there's three:
- Fist-speed (fastest): bare fists, fist weapons, curved swords, rapiers, whips, most small shields, heater shield, etc.
- Normal-speed: most medium shields, the Effigy shield, maybe some weapons
- Special (slowest): applies to those weapons I mentioned above that have the larger parry window
