This is my all-purpose Dex build. Has 40 Dex to get the best scaling, and 28 Str to be able to wield the largest of the Dex weapons; the Murakumo. I swap armors around to make weight when I want to switch weapons, so I never have to change my rings, and always have >54 poise. The current loadout it's got now is my most common one, but it's got a complete Dex arsenal of:

This is my Str build. A bit of a funny one, this one... I just felt like giving him fast roll while wearing full Black Iron and a Great Club--because I can! But as I was making it, plans changed a little, I ditched the full BI set because it wasn't weight-efficient, switched the stats around a bit, and ended-up with what it is now (note: the Steel armor is not weight efficient either! But I like the way it looks). Most of the time it alternates between wielding the Great Club and the Greatsword, but it's whole arsenal includes:

My pure caster! I like to mix pyro spells in with sorceries because of the nature of each; sorceries are very precise, whereas pyro has AoE. Mix them up and you can really mix up your opponent, and that's when they make mistakes. The spells I have on now are the ones I use most of the time, sometimes I mix them up more. This build actually has enough casts on hand to take on multiple foes at once, or back to back, without needing to recharge. The Rapier is purely a last resort in case I run out of casts... even though I've fought as many as 5 duels in a row without needing to recharge! As for the armor, it's purely aesthetic. You could probably make something more effective with the weight, but it wouldn't be nearly as sexy! (Note: it fast-rolls, not med-roll.)
I've got other SL120s in my roster right now, but they've fallen out of my favor. Builds like Dex/ Fth buffing builds, and the like. These 3 builds I posted are currently my favorite for dueling. Then... there's this guy:
The Sandman (Male) - SL80

He's what nightmares are made of! A sleeper--doesn't look like much at first glance, but underestimate him and he'll put you to sleep. His main and offhand weapons are arguably the two most underrated weapons in the game, and his armor looks so light you wouldn't believe he can tank a hit from a greatsword--but he can, and he's got plenty of health to spare for it, too. Anyone who goes toe-to-toe with this build loses. This is my invasion build, and it allows me to really play with the hosts. I never attack unless attacked first anymore, and this build easily allows me to makeup for the disadvantage of letting the host attack me first. That is... if I'm not busy parrying them as a chameleon! This is also a great build for piercing swords and the Balder Side Sword, but you'll have to swap armor around to make weight.

In the honor of the DLC, my latest (and probably final) build uses a combination of Chester's and Artorias's new armors, as well as Ciaran's weapons. Sorry, no Gough love... but you can use his talking stones to complete the new cast! The 16 Str is for the Chaos Blade, if you feel like switching things up a bit. The rest is self-explanatory!
