Most rapiers, the balder side sword, spears and daggers scale nicely with dex.

Scythes are good as well as obviously bows, whips, curved swords and painting guardain sword is very good

take a look at the weapons section of the wiki
anything with an "A" or "S" rating for dex at high upgrade levels would be what you're looking for

look in terms of overall ability katanas are probably where it's at for balance of speed, power and the have bleed!
however there's loads of other weapons that are useful for dex build, I personally think both of priscilla's weapons are good, and the painting guardian sword shouldn't be knocked. It's small but has great scaling.

Murakumo's got sick Dex scaling at +15 if you have the 28 STR to wield it.

the ialto and the uchigatana are great weapons for dex. the washing pole has more range but imo a bit slower, still good though. daggers if you want criticals. scythes are great as well. in the end, you're the one who's gonna use it. do you want range, or attack speed, or less stamina usage, or highest damage, or maybe critical.
i have a dex built and i was choosing between murakumo or great scythe. i chose the great scythe because its faster and uses less stamina, meaning higher damage count in the long run *cough*four kings*cough*.

of late i've seen some surprising ly good results from whips, specially in demon ruins.... maybe cause everything there is naked and whips work better against light or no armor...
