Now in online when the host drinks estus it heals the phantoms. However with the NPC phantoms I don't ever recall seeing them gain helath when I drank estus. Are they different from people phantoms or am I just missing it?

Yeah, you're right. You cannot heal NPC helpers.
It makes it a little more difficult when you have a human helping you to check which character is actually low on health before you automatically heal them.

hmm.. anyone checked if bountiful sunlight or southing sunlight works on npc's?

You can't heal NPC phantoms, but they have a lot more health than you can have, too. They're able to take a beating and keep on going.
Best way to keep them alive is to stand on opposite sides of the boss. The boss will turn to start attacking your NPC, but then you're attacking on its other side, so it'll turn to you. Just keep it going back and forth like this and your NPC will survive no problem.
