You can make a fairly decent 40 dex build around sl 75-80, that, and sl 100 is a pretty good random invasion level. SL 55 is more limited to elemental weapons unless you want to be a little squishier. I find about 60-70 is the best late game co op level. You get fast summons at any of the 4 lord areas and Anor.

I have a 60 build I use for Co-op, it gets action in Anor Londo, all the lord areas (except izalith but no one co ops bed of chaos) and I regularly do Arty and Manus, Kalameet is for some reason much slower for me than the other DLC bosses.
80 can work in the Lord Soul areas and DLC but you probably wont get much action in AL, which is one of the bigger hotspots for Co op.

If you're strictly going with the DLC, I'm actually going to say about SL 70. It can be summoned by lower levels than SL 80 who tend to be strictly PvE, and you can still make a decent build out of it. If you really want to simply choose between SL 55 or SL 80, go for SL 80. Most people at the DLC were SL 55 at Anor Londo, which tends to be a long time before they access the DLC. SL 80 is your best bet.
