To chug or not to chug?
For while those that truly know the taste of Estus, you know the burning of your throat as it slips down into your undead stomach. You know the confusion of fighting one hundred pinwheels half of which are there by magic and the other half because you're drunk... and to still win. You know the headaches after indulging in an uncountable amounts of estus, even though you swear you only took 20 shots. Then, after it all, you know the true wrath of Gwyn as the sun beats you're already obnoxious headache further into you're skull.
And for those that know the sting of humanity, you know the addiction. For those that consume the humanity grow numb after the first 50 hits but you still want more and then all of a sudden you're going through Lordran on you're fifth run looking for under every nook and cranny for humanity because your mind has started to fade. It's only on your seventh run of Lordran that you've realized that you want more and that's when you meet the Darkwraiths, they promise you free humanity... at the price of a life. At that point in time, you're cracked, you've already given up on kindling the flame for the thousandth time and that's when you start to invade. You start to murder others trying to get by in Anor Londo and Blight Town all for your addiction until you become less and less undead and more hollow.
In the lesser of the two evils, I would go back to the estus. As while it was dangerous riding armored boars through the parish while chugging it was nothing like invading for the craving of humanity.
Sidenote: To the OP I believe chugging two is faster than popping a humanity, however chugging three is slightly longer because of the animation time of popping humanity.
