I was surprised to recently learn that the amount of souls dropped by enemies maxes out at NG+6. For clarification, NG+6 is the seventh playthrough:
1st = NG ("New Game")
2nd = NG+ ("New Game +1")
3rd = NG++ ("New Game +2")
4th = NG+++ ("New Game +3")
5th = NG++++ ("New Game +4")
6th = NG+++++ ("New Game +5")
7th = NG++++++ ("New Game +6")
A lot of people refer to the final playthrough as NG+7, but I believe this is a mistake. They mean the seventh playthrough, which is NG+6. The actual NG+7, the eighth playthrough, already repeats the Souls (and likely HP) of the last playthrough.
I'm going to run a few more tests to double check, but I'm pretty confident about this. Compare NG+6 videos to NG+7 on youtube, bosses are dropping the same amount of souls. I'm also currently in NG+6 and I can confirm I'm seeing the same souls dropped as in NG+7, NG+8, etc...
This is acknowledged on the wiki:
Is the implication that enemy HP and difficulty still grows into NG+7 but souls dropped inexplicably stops one playthrough earlier, at NG+6? I think it's likely to just be a mistake.
tl;dr, with a bit of confirmation I should have soon, I think we'll find that NG+6 is where everything caps, not NG+7.

The only issue is that at the top of the same page, it still claims:After NG+ the souls increases with a static percentage of the NG+ values. NG++ increases 7%, NG+++ 10%, NG+4 14%, NG+5 19%, and finally NG+6 (7th playthrough) and onwards has a 25% increase in souls yielded over NG+.
http://darksoulswiki.wikispaces.com/New+Game+PlusDifficulty will continue to slowly grow with each game cycle, until it plateaus at NG+++++++ (NG7) and beyond.
