Try parrying him, at that level you should be able to take him down quite quickly with parries. Just get the timings right and you'll be good to go.

A strong weapon and perhaps the hornet ring for a parry will do a lot of damage to him. What NG are you on?

ill die so many times trying to learn the patterns and timing anyways i killed him b/c sunbro

He's really not that hard to learn the timing on. I could parry him successfully on my first attempt at parrying.

On a side note, this game is trial and error. The game doesn't say "Prepare to die." because it wants to scare you, you are literally going to have to prepare to die. If you practice enough, you'll find patterns that can be easily overcome on some bosses. The most obvious for Gwyn is the fact that he's the only boss that you can parry, and due to that even a low level can one-shot or two-shot him.

As long as you can avoid his grab and get out of his combo attacks most times you should be fine. If you figure out his patterns he is slightly easier to kill.
