Downgrade your knight shield to +10, then go to the Giant Blacksmith in Anor Londo. Go to "Modify Equipment", then scroll down until you see "Greatshield of Artorias". You can create it there.

If you haven't already done it, downgrading the Crystal Knight's Shield from the Duke's Archives works just as well.

Upgrade paths say that anything can be upgraded as long as it is not outside of the requirements.
Ever noticed you can upgrade weapons from +5 through +9 to Raw?

I thought I read you can't downgrade crystal items. I've tried and didn't see the option to make it a regular shield.
