Be it weapons, armor, souls etc. Priscilla is an option for us to either add to the fallen and take her power or leave her as one of the few who need not die. However to kill the cross of dragon, a powerful being, and a god, an being thought unkillable, is the test of true power we have acquired.

You could not kill her
And not test your power
And simply leave the immortal being as it should be
Seeing as it's the only boss that lets you pass by, I think I'll pass Go (Priscilla) and collect my $200 (Xanthous set).

Though Priscilla does possess the power very close to death. It makes sense to either fear her or end her. Everything fears death, whether you agree or not. Lifehunt....something so complex yet something we can only get a taste of it's power. Though it can be a symbol that even the mixing of two powerful bloods can't escape their fate. Death has a interesting thing. It only wants life and works hard to always ensure that it acquires life, even if it takes eternity. Even the Lifehunter is wanted by Death and if we kill her then we done Death's job for it. Though to spare her will only prolong her sad existence.

You might want to read the last few post of the first page. However the short summary is that to kill Priscilla reflects on the moral, ethical conflicts like other boss fights in Lordran.
