The idea would be [Approach --> Iron Flesh --> Completely hack at the opponent --> Hope they don't parry you or simply back off]

It depends on the host's arsenal. If they have Lightning Spear, I'm afraid your fate is sealed. But, the addition of a Bloodshield would help increase the bleed resistance. And, if you get stuck in a tank fight, it may be tough to decide who'll come out on top.
What I think this build lacks is the ability to counter certain things, but I guess most of them are inevitable by logic. By my terms, this build seems fine by me.

It has great defenses all around the board. Which, for one thing, is good. The mid roll is bearable, but fast rolling would negate the threat of roll bs from fast rollers. Unfortunately, I have no idea for which armour would be best.
I see the same disadvantages, but I was told not to mention that. I can't see anything else that could go wrong, apart from what I mentioned before. You are nearly impossible to bleed out, and have huge physical defense. Basically, improved, and with no new weaknesses, from my point of view.

http://mmdks.com/1pqn changed just for the looks, gough helm + havels body looks really ogre-ish, lifehunt scythe will look like your pickaxe. other than that the 2H R2 will be your main method of moving forward i'd imagine, but is a real stamina chugger. maybe the grass crest shield is something to consider...
