I'm going to try to put together a grand depositorium of weapon tips and tricks for each weapon type in the game.

Due to its extra criticals and higher scaling, at higher stats, (~70+ DEX), the Bandit's Knife is stronger than the Rapier for backstabs and ripostes, assuming you're using a +15 weapon.

-Curved Greatsword combos are just like the Great Scythe when used 1H. R2->R2 with the advantage of continuing stunlocking R1s.

-Spamming greatsword R1s is the new greatsword stunlock.
-Use fast roll when using s great hammer for a quick ground pound. Using fast roll is actually faster than DWGR.
-Greataxes can't stunlock anymore, use fast roll attacks.
-Smiths' Hammers and Reinforced Club can infinite stunlock with 52 poise break, substituting greatswords stunlock pre patch.
-Spear's weakness are thrust attacks and arrows.

Poke, roll. repeat. You can Dead Angle with the SKS 1hR1.
Just lock off and swing the mura around. I mean aim it places but really there's no reason to waste it's moveset by locking on.
GT 2h R1 to stop BS fishes to your left, 2HR2 or 1HR1 to stop them to your right. This is also a monster offlock, but it's much smaller reach than the Mura makes this less practacle.
You can win fights exclusively with the large clubs rolling 2hr1, no really.

The Zweihander's 2H R1 can be followed up with massive damage, but stunlocking with it will just let your opponent escape, so don't stunlock with the Zweihander.
The Uchigatana's 1HR1 has 12 frames of start-up. Use this speed to your advantage.
The Dark Hand's knockback on block can be prevented with the use of an animation glitch.
The Estoc's strongest attack is shieldpoke. Avoid using any other attack if you want to win.
The Longsword has powerful combos. Try lowering your opponents' poise, then combo them for massive damage.

Bonewheel Shield: (Shush, it's a weapon)
Using: They have very low defense against most things except lighting. It has 90% physical reduction, not too shabby. If you plan on upgrading, Try the lightning upgrade path as it will increase lighting resistance as well as do some serious damage when you get around to using it's R2. Now, onto the R2. This is the most amazing shield damage move. It cracks something like 120 poise and fully upgraded will do about 600-ish damage. (Depending on armour of course). It is most usefull when back into a corner or when the enemy is really aggressive (For example a R1 spamming spear user) (Note: I said R1 spamming, not all spear users, chill) You use this move, they are most likely stunlocked and can't escape. A good "chipper" move. For tank enemies, They will most likely be using a heavy weapon w/ slow swing speed. Bait them into a jumping R1 or other slow move, then either block or move out the way and let the shield fly.
Against:
You will most likely not run into many people using this, unless you run into me. But my best advice is keep your distance. The BWS (Bone Wheel Shield)'s R2 is extremely slow and long to recover from a miss. Keep as much distance and wait for them to use the R2 (They will) Then Stab Stab Stab away.

The Claymore's R2 is your best friend against any running attack. Its range has the ability to hit your opponent before they hit you and lead to a stunlock. If not, you will win a trade against anything except for ultra weapons.
Roll pokes are one of the best attacks for Ultra Greatswords.
When using an Ultra Greatsword, turn 90º to the left on your first swing to dead angle. If you plan on stunlocking, alternate between turning right and left so you do not get toggle-escape parried.
If you run with light poise when using a heavier weapon and think you will get stunned during your attack animation, toggle at any point during your attack. Free toggle escape!
Learn to insta-dash when using a katana. Lock on, hold down sprint, move in tight circles so yout character starts shuffling, then push your analog stick at an angle (preferably to the right of your opponent) , and press RB. Use this against spear users who only poke and roll, you'd be surprised how easy it becomes to beat them if you get good at this.
Use kick> R1 on parry spammers.
Use a halberd class weapon's range to your advantage, just like a spear. These should be reactionary weapons, not necessarily aggressive.

After a BS, if you backstep and do the r1 of the Great Scythe or LH Scythe, you can clip them with a deadangle before they roll out most of the time.
The regular r1 is easier to combo and land after the r2. Jumping attack into backstep 1h/2h r1 and turning guarantees a deadangle because most people will circle for the bs.

Some of my favorites:
tl;dr: yay longswords.

-- This unassuming weapon really shines when used 2-handed. 2hd R2 horizontal sweeps are extremely fast, do good damage, break poise well, can dead angle, and don't cost much stamina. Think ultrafast claymore 2hd R2s. They also involve foot movement as part of the swing so you can track runners or flippers with them, or scoot right by someone for a backhand deadangle.
-- 2hd roll R1 stab is extremely fast (equal to or possibly faster than BSS 2hd roll stab) and has very generous redirect window such that it works very well without lockon to manually hit moving targets.
BSS:
-- For classic R2 stabs, try to position yourself below opponents on stairs. Lockon targeting from that position will, at a proper distance just at the edge of stab range, angle the stab upwards such that it often goes right under a shield block and stabs people in the toes.
Great club:
-- Rolling 1hd R1 360 degree sweep can be turned into a nearly 720 degree double sweep if you rotate the camera 180 degrees and reverse your swing as you come out of the roll. Works best with mid/fatrolling as slower roll recovery gives you time to reverse (you can also do same move by running towards the camera -- such as when watching people chasing you from behind -- and then manually reversing your swing as you come out of the roll). This general concept works on a number of other heavy str weapons as well, and obviously will absolutely pummel anyone hit by both swings particularly if the first stuns them.
-- The 2hd R2 jump slam clips through nearly everything -- doors, walls, terrain, etc. Given the GC's length this is great for surprising people hiding just around corners with fire tempests at the ready for example. The 2hd R1 sprinting attack is likewise very good at ignoring obstructions. Better still, the GC usually deals damage even if it also rebounds off something nearby, meaning you can use deflections (such as when doing 2hd R2 vertical hits when near a wall) to actually get greater DPS, since the deflection recovery is faster than a swing recovery.
-- 2hd R1 sprinting attack also has an invisible AOE stun similar to many ultra greatswords, which will stagger nearby targets even if you don't hit them directly (both PvP and PvE). It often staggers people regardless of poise, and even if you wouldn't have staggered them with an actual hit. This means a miss with the charge move on a dodging target is not always an automatic BS on you. And if you do connect with the charge, sometimes buffs on the club will hit twice, once from the actual attack, and again from the AOE stun (I get this more often with magic type buffs, not resins).
Greatsword:
-- Dragon roar stun + greatsword 2hd R1 is usually a free (and buffed) hit if target is in front of you. Odds can be further improved by unlocking and keeping target to your right front quarter just before you touch off the roar, as first 2-handed swing is right to left.
-- Like some of the other ultra greatswords, the greatsword is surprisingly good at blocking when held 2-handed in terms of both damage reduction and stability, and even gets decent elemental blocking if taken on an elemental path (cept for magic)-- Pairs absurdly well with Leo ring, including the very fast roll stabs. Also has AOE stun on charge move, like GC above.
tl;dr: yay longswords.

The Great Scythe R1 is NOT USELESS cornsarnit. It's excellent at punishing overzealous parties who have burned up their stamina.

Most heavy weapons (ugs, ugh, the msgs) stun long enough to follow up with a bs at close range. What this means for these weapons, is that you should actively encourage an opponent to try to bs you, as the dead angle roll r1 with the hammers and r1 with the ugs is frequently an instant victory, as these weapons hit in excess of 400 damage per hit and bs for around 1k.

It's easy to lure people into set up parry's by letting them think they've stunlocked you, instead of rolling away, simply stand still and watch as they try and swing again, only to get a surprise instead! >

When using the Server, try to take a more evasive fighting style. Your attacks are easy to punish, so rolling quickly out of the way of an attack could be a lifesaver. Try using the Relentless Regenerator build (look up on YouTube for more), it is ridiculously effective in fights where endurance is more important than power.

How to win with all ultra weapons:
Step 1. Two-handed light attack until you hit.
Step 2. Backstab them out of their hitstun.
Step 3. Roll at them as they're getting up.
Step 4. Delayed rolling attack.
Step 5. Repeat steps 2 through 4 until they are dead.
Optional step 1.5: While walking behind your opponent for a backstab, equip the Hornet Ring. Remove it after the backstab animation finishes.

Many opponents find the back step/r1 forward running slash of the curved sword move set hard to read.Use a regular back step to trick an attack out of them and then catch them with the running slash in mid attack.
