Depends what you are trying to accomplish. If you plan to fight Gywndolin and make yourself an enemy of the Darkmoons the rest of your playthrough and make Anor Londo dark, then yes. Otherwise it's better to leave her be.

Bah I did forget the spells and the brass armor set, also the faith based wand out of his soul is neat. He is kinda a bit silly to fight against though

Not the final boss (Lord Gwyn), but Gywndolyn - the optional boss in Anor Londo.

In case this as come off as weird to you that instead of Gywnevere we switched to Gywndolin, and since no one has mentioned this yet Dooshka, by killing Gywndolin you in effect kill Gywnevere, as she's actually an illusion like the rest of Anor Londo.
As for beating Gywndolin, you have to move fast and unless he is charging up hide behind pillars when he attacks. Blocking or trying to absorb damage, though I haven't tried with Great Magic Barrier, doesn't really work.

Really? I just looked skyward then shot her with a dragon arrow :x It's easy to do once you know she's not real.

You can also just kill Dark Sun Gwyndolin (girly dude in the long hallway) and leave Gwynevere (busty illusion chick) alive - this way you won't turn Anono Londo dark and can still farm the area enemies for souls & items ( I think when you kill Gwynevere the number of enemies in the area decrease but also become harder). I only killed Dark Sun Gwyndolin because I wanted his soul for the Darkmoon Bow. It would appear (at least in my game) that if you kill Dark Sun Gwyndolin the illusion of Gwynevere will not disappear (she does not die) - Gwynevere can only be killed if attacked directly.
Also, in my game I killed Dark Sun Gwyndolin right after placing all of the souls in Lord Vessel to get to Kiln - so right before the final boss battle. I don't know if this factored into Anono Londo staying light for me.
Not killing Gwynevere also keeps you from having to deal with alot of DM invasions in this area since it will still be light. But you will lose the use of the bonfire (the one with attendent) between the two sets (of 3) of stone giants - since killing Dark Sun Gwyndolin will aggro the female bonfire attendant - thus forcing you kill her rendering it unusable (you can warp to it but not from it & a soul to boost your estus power by killing the attendant). That's not too big of a deal since you should have some Homing Bones and there are 3 other bonfires in close proximity.
Has anybody else been able to keep Anono Londo light while having killed Dark Sun Gwyndolin and leaving Gweynevere alive (or not having killed her yet)?

Really now? I was always under the impression and pretty sure I had read the opposite. Thank god for that I really don't like Dark Londo.

I always killed Gwyndolin (all 3 times I restarted a new game, wasn't happy with my chars) and everytime my Anor Londo didn't get dark, which is a bit illogical if it is true that Gwyndolin created the illusion of Gwynevere. But why not actually, who says the illusion can't just remain? It's a magical fantasy world at last. Or more precisely it's a game at last lol
