On Vagetta's one-hit kill competition he needed the Dragon Head and Torso fron Dragon covenant. What do they do for you? Thanks

This actually shows that these pages need some love about the dragon form. When I wake up I might have to do some edits.
The roar increases the damage you deal for a short time while consuming a good deal of stamina. The roar acts like WotG/Force, it breaks poise or stability. So you can stagger a person with your roar.
The head gives you fire breath which consumes stamina.
The torso also gives you dragon claws, so your unarmed attacks hit decently hard.
You can't wear a headpiece with the head, or any armor with the full body form. Meaning you will be easy to kill but you get that roar.
EDIT: Actually the Covenant page covers it all really well so I won't need to do any editing. Well, it might be a good idea to add the effects to the specific page so I'll probably do it still when I wake up.

Tolvo's right on the specifics. You can get a lot of damage out of attacks if you roar and then hit your enemy, and it boosts all types of damage. It also has a minor defensive role in protecting against bs fishers and high poise Curved Sword spammers. I like to combine the Roar with the Halberd and Leo ring for some truly epic damage.
