Why would you want a moon uchi when crescent has better scaling and more AR.

But the difference between physical and magical AR on the crescent is larger, meaning it would most likely do more damage. Anyway I don't know for sure which 1 will deal most damage, so I guess the moon trolled me lol.

I'm not a DeS expert, but as far as i know, crescent will outdamage moon only if you have very high magic. Like 40+. Otherwise moon is better.

Well crescent have "A" scaling while Moon has "C" scaling. But I figured that moon has better base AR so in the end moon is stronger (I think so).

Scaling does not stop at 30. Scaling stops at 99, but hits heavy diminishing returns on most weapons at 50.
Moon weapons have more total AR at max stats because of their physical scaling. With high magic and low physical stats, Crescent has more AR. IIRC, Crescent weapons start to have more AR than Moon at something like 35'ish magic. But just use these: Moon, crescent.
As for the uchi's, just get PBWT and kill geckos in world 3 and/or world 4. Thomas dupe the stones, get two uchis, talk to Ed, upgrade them.
