Sorry for double post, but I think I have an idea for determining the soul level if we aren't going to set it at a static 120. I'm currently running the numbers right now, but the idea is just to determine which NPC would require the most stat investment to properly mimic, then add maybe 10 soul levels of free points to those minimums and set that amount as the level for our builds (probable NPCs I'm thinking for the highest possible level are Smough or Leeroy due to their weapon requirements).
EDIT: Very rough number crunch puts a Paladin Leeroy build at the highest minimum requirements, and without using rings to boost equip load and keeping weapon requirements to their minimum, it would take a character to be about level 90 depending on starting class.
