I get em to about half and then they pull some **** on me.

Do you have pyromancy? Get close to them, use ironfist, the combustion them to hell! I beat them in like 2 mins in NG+ by myself

Secondly, if you really need humanity farm for a dark hand and use that if you have not already.
Iron flesh really isn't that great after the patches.
