Here's my take. It has a bit of poise, just so you're not stunlocked by everything, and it redistributes a lot of that strength value. The estoc isn't a weapon that acts particularly efficiently for a combined strength and dexterity build, so those points are better spent in endurance and vitality. With Chester's Top Hat and Chester's Long Coat, you still get the aesthetic, but the hands and legs are given knight gear for a bit of a defensive boost. Lastly, the extra equip burden is filled with a Balder Shield, for those times when you need to block 100% of physical damage.
With these alterations, you'll be doing almost as much damage, but you'll have more HP and a greater capacity to mitigate damage.
