Somehow I feel this build would get tired very quickly.

But a tank is supposed to have very high HP, I would aim for +2000 HP and mid roll instead + 106 poise.

It has Grass Crest Shield for a reason.

Not necessarily. A tank is simply the one that can take the most hits. If Player A has 5000 HP but takes 100% damage of all damage, but Player B has 3000 HP and takes 50% of all damage, who is the better tank? Getting to 2000 HP requires around 70 VIT, which means I lose END my fast roll for 500 more HP? I think my defense makes up for it.

And who would try to tank 2 hits from a Greatsword? Clearly you parry the second swing.

elemental weapons get nerfed in PTDE.
By 10%. I'm aware. But, would you rather have me using non-scaled weapons?

actually yes, the scimitar could be buffed up to a stronger point without losing many points.

But in the case of using buffs, I would have to "bind" myself to using the weapon because I lose the buff if I switch out. It seems like a real hassle having to menu swap, switch weapon, buff every single time I feel like using the Falchion

I would do this seig, it has less defense, but can tank hits like a boss, and survive.

It's also important to remember average defences as well. You'll find Magic defence is often higher than Lightning defence as shown by the chart below. After that, the increased vulnerability of having to buff, and the innate time limit till expiration all makes it seem rather silly for a moderate to negligible damage increase.

About the original build, I'd remake the build to look like this, which would seem more effective to me. The lowered Weak Attack damage of the Great Scythe is made up for by the higher Strong Attack damage that it is capable of doing. As well, Replenishment increase your effective HP total, which you do recognize as a concept, and more than makes up for the slightly lowered Physical Defences, in my personal experience. If you don't want the miracle, the faith can be reinvested to give 90 more HP, and allow use of the ever-popular Great Combustion. Or, 2 of those points that would've been placed into Vitality could be placed in Endurance to allow use of the Grass Crest Shield. These all Light Roll, which is more useful, in my opinion, than more Poise to tank some stuff that you are already confident in dealing with.

^I forgot to say, mid roll if your weapon doesn't have good roll or running attacks. Weapons like greatswords and the Halberd are good for med roll because their good attacks are just spamming R1 to break poise.

I think the GCS is too weak to be "tanking", you're just a standard End gouge with elemental weapons. 451 defense doesn't mean that much with only 1550 HP, there's not much reason to go above 400 Defense, as severe diminishing returns start to kick in. Drop End, use a lighter piece of armor to get to 400 defense, and boost Vit to 50 at least if you want to be really gouged.

I'd go for mid roll with 40 End and 79 Vit.
