When you light the flame you renew the flame thus ensuring that the gods continue ruling its why the want you to relight the flames not lighting it the flames fade and the gods rule no more the undead die off causethe bonfires will no longer be linked to the kiln flame

W can't be certain of that. The chosen undead's sacrifice may provide enough fuel to remove the curse and restore the balance, reigniting the age of fire.

Also while its true there will continue to be undead and people eventually going 'hollow' there is a large part of the world that is unafflicted by that.
If you decided to become the Dark Lord and allow Kaathe's plant o unfold I assure you that Dark Wraiths would be running rampant stealing humanity left and right.... I dont want to lose my humanity to be honest.

If gwns lord soul couldnt norish the flame what chance does your have you may have killed some demons but gwyn slew immortal dragons

Its not that the Soul is nourishing the flame but if the Chosen Undead is the possessor of the Dark Soul then it is entirely plausible that that one soul is enough to satisfy the flames.
In anycase the Age of Fire would only be extended for as long as that soul could fuel the fire.... it wouldnt have to be as long as Gwyn but even then that would leave enough time for another chosen undead to reach the flame and kindle it.

tyhe chosen undead does not posses the dark soul his progenetor did the original undead not to be confused with nito the first Dead I believe that humanity is the bits and pieces of whats left of the dark soul

Humanity feeds the flame, not the soul. However as the chosen undead you are chosen. If you are powerful enough to become the dark lord you can surely keep the flame alive. Your soul may also be the dark soul. We never see it do we?

No we don't but my theory on why the player character naturally accrues humanity from killing human like creatures in the various areas is that humanity either has some direct relation to or is a piece of the Dark Soul.

Think of it this way, throughout the game you can kill a lot of the evil/corrupt "deities". Therefore, they wouldn't be in control in another Age of Fire.

On a note I did a BK Cosplay and I chose to light the flame on there considering that as a disciple of gwyn you would surely rekindle it.

I usually Link the Fire.
I used to look at the Gods in a negative light, but I can understand their reasons for doing what they do.
Especially after playing the DLC.
Also, seeing everything burn looks pretty and the music that plays as everything is burning is absolutely beautiful.

Although, as with everything regarding thematic decisions in DS, i don't believe either outcome is a "good" or "bad" outcome. It's all about the murky area inbetween and personal interpretation.
One thing still has me wondering about the "Dark Lord" ending:
